Well, after Kev tipped over the recipe box by accident, I decided maybe it was time to sort through the recipes, as I knew there were several "non-favorites" in the box. I threw out tons, many were very similar to others. I plan to try several new recipes within the next 3 weeks before I return to work, and then 1 new recipe/week--just to torture our kids! They HATE new recipes! Although it's really only been 2 days, I've enjoyed getting back in the kitchen. Today I'll cut out recipes from magazines and organize my pantry--AGAIN!!!
While going through the recipes, I found an old favorite I haven't made in years. I thought I'd share this nummy dessert with you.
SOPAPILLA CHEESECAKE
2 (8 oz) pkgs cream cheese
2 (8 oz) pkgs refrigerated crescent dinner rolls
1 cup sugar
1 tsp vanilla or almond extract
1/2 cup margarine or butter, melted
1/2 cup cinnamon sugar
Using a 9x13 pan, unroll one pkg of refrigerated crescent rolls and line the bottom of the pan, flatten the dough. Mix together the cream cheese, sugar and extract. Spread over the crescent rolls. Unroll the other can of crescent rolls and place on top of cream cheese mixture. Pour one stick of melted butter or margarine over the top and sprinkle with about 1/2 cup of the cinnamon sugar mixture. Bake at 350 degrees for 30 minutes.
